Mango Cake Roll

 I had a can of mango puree in my refrigerator..not one actually two... one got over making mango shakes (blending the puree with cold milk and sugar)   for family and for the sudden unexpected guests;and was in doubt what to do with the other...again shake..no way!!
         Then thought about making a cake..but ended up making roll... anyway the pieces got over in seconds..
Ingredients
Eggs         2(separate yolks and whites)
Sugar        80 g
Salt           a pinch
All purpose flour(sifted 2-3 times)  75 g
Mango puree          1/2 cup
For the filling(outside covering)
Whip cream(powder)     1 sachet (36 g)
-(prepare as per instruction on the pack)**
For the filling inside
Whip cream       1-2tbsp taken from the above prepared cream
Condensed milk  1-2 tbsp
Cheddar cheese spread  1-2 tbsp
-In a bowl add all three and mix well using a spoon.
Preparation Method
-In a large bowl beat the egg yolks,sugar and salt using an electric egg beater for 2-3 minutes and then add the mango puree  and beat till the sugar dissolves completely and becomes creamy.
-In another bowl beat the egg whites till stiff peaks are formed.
-Add the sifted flour to the egg yolk mixture and mix in slowly.
-Now fold in the egg whites to this mixture
-Preheat the oven to 120°C
-Line a baking tray with parchment paper greased with a little butter.
-Now pour the egg mixture into this and spread evenly on all sides.
-Bake for 10-12 minutes(adjust the time and temp. according to your oven settings)
-Transfer this onto another tray(removing the parchment paper) 
-Spread the filling and slowly roll this lengthwise.
-Once rolled spread the whipped cream on the outside portion of the roll.Refrigerate for at least 2 hours... cut  into pieces and serve

*Bake it at a low temperature,so that it does not get burned.
*Insert a toothpick to check whether its baked.
*If you want, you can scrape off the brown part(at the bottom of the cake) using a knife. 
*Prepare the whipping cream using cold milk and refrigerate it for sometime before spreading on the roll.**(I used Dream Whip)
*You can make designs on top of the cream of your choice-I used a little whip cream and mango puree- mixed and piped those lines.
*Refrigerate the roll for at least 2-3 hours so that everything sets well and you can cut them easily.

Prawns/Chemmeen Macaroni Masala

I have made this macaroni in a masala style and made using Prawns.You can use Chicken also. It can be used as a one pot meal.For this you need
Ingredients
1.Macaroni          1 pack (400 g)
2.Prawns             300 g
  Kashmiri red Chilly powder   2 tsp
  Salt       as needed
  Oil         for shallow frying
3.Onion               4 (sliced)
4.Tomato            2 small (diced)
5.Capsicum         1 big (diced into 1/2 ''pieces)
6.Ginger              11/2'' piece
7.Garlic                6 cloves
8.Green chilly        3-4
9.Tomato ketchup   2-3 tbsp
10.Fennel seeds powder  1 tsp
11.Turmeric powder       1 tsp
12.Garam masala           1 tsp
13.Salt                   as needed
14.Oil                   2 tbsp + 2tsp
 Method
-Cook macaroni adding 2 tsp of oil,enough salt and 1 tsp turmeric powder.When cooked drain the water and keep the cooked pasta aside(follow the pack instruction for the amount of water to be used)
-Marinate the prawns with chilly powder and salt for 10 minutes and then shallow fry.Once done,drain the oil and keep the fried prawns aside.
-Grind ingredients 6,7 & 8 together and keep aside.
-Heat oil in a non stick pan.
-Add the onions and a little salt and saute for sometime (till the onions are done)
-Add the ground paste and mix well.
-Now add the tomatoes saute for a minute and add the diced capsicum.Mix well.
-When the tomatoes become soft add the tomato ketchup,fennel seed powder and the garam masala.Saute well.
-Now add in the macaroni and the fried prawns.Give a good mix,cover and keep on low flame for a minute.
-Switch off the flame and serve...
*If you prefer this a little more spicy you can add a little pepper powder.

Chikoo Milk Shake

Today's recipe is a simple but delicious Milkshake using Chikoo/Sapota which is one of our favorites.In India we have a tree which yields very sweet Sapotas.
