Uzhunnu Vada/Urad Dal (Split Black Gram)Vada

Uzhunnu Vada is a popular snack or breakfast of South Indians.Though not very famous in the Malabar part,but when ever by chance we happen to be at a restaurant in the mornings there is always this vada.We have both folks who love these Vadas,and the other who just won't even touch these.In my family there is again a division between Vada with Chutney or Sambar and the Thayir vada-Vadas dunk in a yoghurt based dip.
Ingredients
Split Black Gram/Uzhunnuparippu/Urad Dal     2 cups
Water      little (to grind the urad dal)
Onion       1 (big,finely chopped)
Green Chilly  3  finely chopped
Ginger  1'' piece ( ''          ''   )
Curry leaves    2 sprig (chopped)
Salt        1/2 tsp
Oil     for deep frying


Preparation Method
-Soak Urad dal for 3-4 hrs and then drain the water.
-Now grind this using very little water into a smooth paste.
-Transfer this into a bowl, add the chopped onion,green chillies,ginger,curry leaves and salt.
-Mix all this well (can use a whisk or with your hand)  
-Heat oil in a Kadai.
-Dip your hands in a bowl of water,take a little portion from the batter,make a small ball,flatten it slightly and make a small hole in between(do all this with your wet hands)
-Slowly drop this into the hot oil.
-When it rises up flip it and cook till golden brown.
-Transfer on to kitchen tissue
-Serve hot with coconut chutney 


*Mix the batter very well,this helps in forming a nice & fluffy vada.
*Wetting your hands(each time you take a portion of the batter) prevents batter from sticking to your hands.
